
Cor blimey! This looks tasty. Courtesy of Food in a Minute, I’m sticking this recipe here so it doesn’t get lost in amongst all my recipe bits and bobs.
Ingredients
500g lamb steaks, trimmed and sliced
2 tsp crushed garlic
400g can Wattie’s Moroccan Style Tomatoes
1/2 cup dried apricots, diced
2 cups couscous
2 cups boiling water
400g pkt Wattie’s Steamfresh Sensations Vegetables with Garden Style Herbs
1 lemon zest and juice
2 Tbsp sliced almonds (optional)
- Heat a dash of oil in a non-stick frying pan and brown lamb in batches. Add garlic and cook until softened. Pour in the Wattie’s Moroccan Style Tomatoes and add the apricots. Simmer over a gentle heat for 10-15 minutes or until sauce is thickened and lamb is cooked.
- To make the couscous place in a bowl and pour over the boiling water. Cover and set aside for 5 minutes, then fluff with a fork.
- Cook both bags of Wattie’s SteamFresh Sensations in the microwave according to the directions on the packet. Drain off any excess liquid and stir through the couscous with lemon juice and zest, garnish with almonds. Serve alongside the Moroccan Lamb.
Note: Whenever I make a tagine like this, coconut and/or plain unsweetened yoghurt are usual accompaniments to the meal. Yum!
